Description
Position Summary:
The Meat Cutter is responsible for preparing, cutting, and recording all meat products according to Santa Fe Cattle Co. specifications. This role ensures consistent quality, accurate portioning, and proper yields while maintaining a clean and safe work environment.
What You'll Do:
- Cut and prepare meat according to company specifications for steaks, roasts, and other menu items.
- Record weights of all bulk meat deliveries and daily usage accurately.
- Monitor yields and maintain logs for inventory and portion control.
- Perform daily steak counts and create steak pars based on product mix.
- Maintain cleanliness and sanitation of work areas, tools, and equipment at all times.
- Follow all food safety and handling procedures.
- Work independently while maintaining productivity, accuracy, and quality standards.
- Communicate with management regarding inventory, quality issues, or supply needs.
- Perform other duties as assigned by management.
- Strong work ethic, self-motivation, and pride in quality craftsmanship.
- Knowledge of different cuts of beef and basic knife skills.
- Familiarity with food safety procedures and proper handling.
- Basic math skills for weighing, portioning, and recording inventory.
- Ability to work independently while maintaining accuracy and efficiency.
- Previous experience in meat cutting preferred but not required.
- Stand for long periods of time and work in a cold environment.
- Lift and carry heavy items up to 90 lbs regularly.
- Maintain focus and precision while performing repetitive tasks.
- Work safely with knives, cutting tools, and other equipment.
